Basic Cream Cheese Frosting

Hello Everyone!  A lot of times with my cupcakes I invent a new frosting to go along with that special cupcake and sometimes I want to just play with the cake flavors and not the frosting.  For those times I always go to my go to basic Cream Cheese Frosting!  It is light and creamy and OH SO YUMMY!!  Hope you agree!


1 Package Softened Cream cheese
3 cups Powdered sugar
1 TSP Vanilla
1 stick of melted butter

You want to add these all into your mixing bowl and mix on high until it is smooth.  A good cream cheese frosting is always smooth and yummy.  If you find that your frosting is too thin after you add the ingredients you want to add more powdered sugar.  When I have to thicken mine I add a 1/2 cup at a time until it is the texture and thickness I want.

Butterscotch Cupcake


This one is special for my boss who requested a Butterscotch cupcake.  This one is to die for!! So sweet and decadent!!! Hope you all agree.

Batter:

1 Cup flour
1/2 Cup White Sugar
1/2 TSP Baking Soda
1/2 TSP Salt
1 package Butterscotch Pudding mix
1 TSP Vanilla
1 Cup butterscotch Chips
2 Whole Eggs
1 Egg White
1/2 Cup milk
4 TBSP Melted butter
2 TBSP Olive oil

Mix all together until smooth and put into your cupcake liners. Bake at 350 degrees for 17 minutes.

**Cream cheese frosting**

Garnish:


1 Cup Butterscotch chips melted
1/2 Cup milk
1/2 cup Toffee bits **Optional**

Melt the butterscotch down adding a little milk at a time until the butterscotch is melted to a liquid texture.  When it is melted grab a spoon and drizzle over the top of the cupcakes.  Sprinkle Toffee Bits on top for an added crunch.

Mocha Chocolate


Here is a Really good one for all you chocolate and Coffee lovers, What is better then to mix them together???

Batter:

1 1/2 Cup Flour
1/2 Cup Sugar
1/2 TSP Baking Soda
1/2 TSP Baking Powder
1/2 TSP Salt
1/2 Cup Chocolate baking powder
1/2 TSP White Vinegar
1 TSP Vanilla
3 TBSP Olive oil
1 Cup Chocolate Chips
1/2 Cup Whipping cream
2 egg whites
1 Cup fresh brewed Coffee

Mix this all together and place in your cupcake liners. Bake at 350 Degrees for 15 minutes.

*This also is frosted with the cream cheese frosting*

Garnish:

2 Cups melted Chocolate 
2 TBSP Coffee Grounds

Melt the chocolate completely, When melted pour onto a cookie sheet covered in Wax paper. Spread out evenly.  Sprinkle the coffee grounds across the melted chocolate. Place into the freezer for 20 minutes or until completely hard.  Bring out of the freezer and break into shards.  Place one shard on top of each cupcake.  

* I had extra of this garnish, If you do too put it in a zip-lock and place in the freezer it makes a really yummy snack when you need just a small amount of chocolate :)

The Drunken Pineapple


Here is the next one!  I love this recipe it was SO yummy and VERY moist!  Hope you all agree!

Batter:

1 Cup flour
1/2 Cup white Sugar
1/2 TSP Baking soda
1/2 TSP Baking Powder
1/2 TSP Salt
1/4 Cup Pineapple Juice
1/3 Cup Crushed pineapple (You want to place a paper towel on top of these and press to dry them out as much as possible before you put them into the batter)
1/4 cup Cherry Juice
1/3 Cup diced maraschino cherries
1/3 Cup Rum
2 Egg Whites

Mix it all together until smooth and put into your cupcake liners.  Bake at 350 Degrees for 15 minutes.

**Top this also with the basic Cream Cheese Frosting**

Garnish:

For Garnish on this one I took one Cherry and one piece of pineapple and placed it on top of the cupcake.  Then with a spoon get a small amount of the maraschino Cherry juice and drizzle it on top.

YUMM! Hope you love this one as much as I did!


Maple Apple Cupcakes


I am trying out a bunch of recipes right now to be sure that I make the perfect ones for my daughter's baptism next week.  Because of this you guys are about to get so many new recipes it is going to be crazy!  I have had ideas sitting in my head for a while and it was time to let them out.  Without further ado here is Maple Apple Cupcakes!


Batter:

1 Cup flour 
1/2 Cup Brown Sugar 

*Sift these together into your big mixing bowl BEFORE adding the rest of the ingredients!

1/2 TSP baking soda
1/2 TSP Salt
1 Teaspoon Cinnamon 
1/2 Teaspoon Vanilla
1 Egg
1 Egg White
1/3 Cup milk
1/4 cup apple juice
1/3 Cup Maple Syrup
1 Red apple (Peeled and finely chopped)

Mix all ingredients together and fill your cupcake liners with them.

Bake at 350 degrees for 15 minutes.

**For frosting on this recipe I used my baisc cream cheese frosting. I will post this recipe on here also for you to follow.

After you have frosted your cupcakes get your garnish ready.

Garnish:

1/2 Red apple Cut into whatever size you feel is the best for you (I did into quarters)
1/2 TSP White Sugar
1/2 TSP Cinnamon

Toss these all together until the apples are well coated.  Place one piece on the top of each cupcake.  When finished take any remaining cinnamon and sugar dust and sprinkle ontop of the cakes for a little more pop.  Enjoy!!!

Brown Sugar Maple Cakes with an Apple and Pear Filling

So When I learned that mason jars can be baked at high temperatures a desire rose inside me, I had to create a cake in these jars! I wanted it to be something that my husband could just stick in his lunch and take with him.  These fit the bill perfect!  They are a bit time consuming but I can tell you that they are so worth it!

The Apple- Pear filling takes a little bit of time to simmer to the perfect filling. Pre-heat your oven to 375 Degrees.  This recipe makes 7 mason jar cakes.

Apple-Pear Filling

3 Apples Chopped ( I used Honey Crisp Apples)
2 Pears Chopped
1 Stick butter melted
3 Tablespoons Jack Daniels 
2 Tablespoons maple syrup
2 Cups Brown Sugar

Melt the butter, Jack Daniels and maple Syrup together until blended and melted all the way.  Bring to a small boil.  When the boil has started add in the Apples and Pears.  Bring back to a boil.  When boiling add in the brown sugar slowly and mix in.  Turn down heat to medium and let simmer. Stirring occasionally. When this is on the oven begin making the batter.


Maple-Brown Sugar Cake:

2 Cups flour
1 Cup Sugar
1/2 Cup brown sugar
1/4 Teaspoon Salt
1/2 Teaspoon baking Soda
1/2 Teaspoon baking powder
2 Eggs
2 egg whites
1/3 cup milk
1/2 cup maple syrup
1 teaspoon vanilla
1 Teaspoon cinnamon
4 Tablespoons melted butter

Mix all ingredients together  until smooth.  Then scoop into mason jars until about 1/4 full. 

When the apples and pears are soft pull off heat.  you may have a bit of liquid still that is OK just use a slotted spoon to scoop out, keep the amount of liquid you are scooping in to a minimum.  This will help the cakes cook properly.  Add a couple of spoon fulls of the apple-pear filling on top of the batter in the mason jars.

Add remaining batter to top off the mason jars.  They should be a little over half full when all is said and done with the cakes.

Sprinkle a small amount of brown sugar onto the top of the cakes.  

Place on top of a Cookie sheet and put into oven. Make sure that the jars are not touching each other. 

Bake at 375 degrees for 25 minutes or until the cake comes clean on a toothpick. 

Place onto a cooling rack and let cool.

If you would like I added some whipped cream on top of the cakes to give it a little extra gooey.

Serve at room temperature.

Peanut Butter and Jelly Cupcakes


Who Doesn't love a Peanut butter and Jelly? The soft bread, the smooth salty taste of the peanut butter and the gooey flavor of the jelly.  I thought to myself What would be better then putting that into a cupcake?  So I present to you the P B & J Cupcake!

Pre-heat the oven to 350 degrees.

Batter:

2 Cups Flour
1 Cup Sugar
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Teaspoon Baking soda
1 Tablespoon White Vinegar
1 Teaspoon Sesame Oil
2 Teaspoons Vanilla
1 Whole egg
3 Egg Whites
1 Cup Milk
3/4 Cup Peanut butter

Mix all ingredients together until smooth. Fill your cupcake liners to half way and place in the oven and bake for 15 minutes.  While those are baking mix together the frosting. 

Frosting:

3 Cups Powdered Sugar
1 Tablespoon Vanilla
1 Stick Melted butter
1/2 Cup Peanut butter
3 Tablespoons milk

Mix together until smooth, 

When the cupcakes come out of the oven let them cool first and then  you want to use a small knife or spoon and core out a small chunk of the center.  This gives you a small hole in your cupcakes to add the Jelly.  I used a Grape Jelly.  Spoon the jelly into the hole until it is full to the top.

When the Jelly is in the hole Top with the Peanut butter frosting.  If you would like to add an additional taste of Jelly add a small dollop to the top of the frosting.

Enjoy!!! Very good and I strongly suggest eating with milk!
