Chocolate Bliss

Hello again!  I hope everyone had an amazing holiday!  If you are looking for a yummy dessert to put out at this years New Years Eve party boy do I have a winner!  I started out trying to make my Choco-Cherry Love but due to the fact that my little brother ate so many of my cherries the end result did not have enough Cherries in it to satisfy me into calling this recipe that, however the richness and pure delight of the Chocolate made me realize it was an AMAZING Chocolate cupcake.  So without further ado Chocolate Bliss Cupcakes!

Cake mix: Makes 18 Cupcakes

2 Cups Flour
1 cup sugar
1 cup baking cocoa
1/2 TSP salt
1 TBSP baking soda
1 TBSP White vinegar
3 egg whites
1/2 cup milk
2 TBSP oil (I used olive oil)
3 TBSP Maraschino Cherry juice
1/2 TBSP Vanilla
1 6 Oz jar Maraschino cherries (chopped without the juice)

Mix all ingredients together until smooth and fluffy

Bake at 350 Degrees for 17-19 minutes or until toothpick comes out clean

While the cupcakes are in the oven I used this time to clean up my dishes and prepare my frosting.

Frosting Mix:

2 Cups powdered Sugar
8 melted Lindt Milk Chocolate truffles
1/2 cup whipping cream

Melt down the lindt truffles until completely smooth.  Then place into a metal mixing bowl, add the powdered sugar and mix together until kind of clumpy. (it looks like maybe part of the chocolate has re-solidified.) then add the whipping cream and beat until completely smooth.  This took me about 5 minutes total to make nice and fluffy.


When the cupcakes are nice and cooled I skipped piping the frosting onto these and went ahead and just smoothed it on top with a spoon.  It seemed to work best with the thickness of the frosting.  When they are finished grab a spoon and scrape the remaining melted chocolate from your kettle and drizzle it over the top of the cupcake.

This recipe is so easy and nice and quick that I think it may become one of my favorites to make, and according to my husband it is now one of his favorites to eat!
